この「冷凍麺だから十分コシはあるし」のところに注の記号がある。その注が面白かった。それは、
私は常日頃から、冷凍うどんを考案した人は天才だと考えている。保存性という観点のみならず、打った直後の麺をのぞけばうどんのコシを保つ方法としては他の追随を許さない。ゆで麺は言うに及ばず、乾麺もまたその足下に及ばない。2010年６月にアメリカのサンディエゴで開催された天文学の国際会議期間中、５、６名の天文学者と日本居酒屋でその話をしたところ、「冷凍うどんなんか食べたことがないし、うまいとも思えない」という世界観の狭い可哀相な（あるいは裕福な）人がいた（ちなみに大阪出身の東北大学Y教授）。そこで私は「この店のメニューにあるうどんを注文してみよう。冷凍うどんかどうかは食べればすぐにわかる」と豪語した。実際、出てきたうどんはコシがありとても美味であった。早速私は冷凍うどんであることを看破し、日本人バイト店員に「厨房でこれが冷凍うどんであったかどうか確認してきてください」と頼んだところ、確かにそうであるとの返答を得た。もしも未だ冷凍うどんを試したことのない方がいらっしゃれば、ぜひとも今からスーパーに直行されることをお勧めする。ちなみに最近は東京大学生協食堂において提供されるうどんもまた冷凍麺を使用している事実にもこの場で注意を喚起しておきたい。
須藤は連載しているこのエッセイで、ずいぶん難しいことも書きながら、注では思いっきり遊んでいる。珍しいくらいユーモアのある学者なのだと思う。
